The special climate in California allows the cultivation of many different types of olives. This enables the production of olive oil with unique flavour profiles. Unlike many other olive oil companies, the entire manufacturing process takes place on the Ricchiuti family's own estate in California's central San Joaquin Valley. The olives are picked when they are perfectly ripe and only a few kilometres away are processed in our own mill. Neither heat nor chemicals are added and in the end the cold-pressed California Extra Virgin Olive Oil contains a maximum of 0.8% free fatty acids.
