Origins of the White Kidney Bean The White Kidney Bean (colloquially known as the Cannellini Bean) is related to the more commonly known Red Kidney Bean, only with a different colour (white) and a milder but sweeter flavour. The beans also have a creamy texture when cooked although have a less distinguishable kidney shape. The White Kidney Bean was originally cultivated in Argentina by Italian migrants but is thought to be native to Peru where the beans were spread through the trade markets of South and Central America, followed by Europe. The bean is extracted from the Phaseolus vulgaris plant and is part of the Legume family. You will find the plant growing in areas with access to full sun and well-drained soil which are optimal conditions for the plant to grow and produce more seeds - seeds we know to be the Kidney Bean.
